Gardening By The Moon Makes Great Wine

Biodynamics is the practice of gardening by directing earth energies and a growing trend in today’s finest vineyards. The practice was devised a century ago by Austrian philosopher Rudolf Steiner and is becoming the next big fad in viticulture.

Although the methods seem far from scientific, one can’t deny the results - biodynamic procedures are used in France’s most prestigious vineyards including Domaine Leflaive in Burgundy whose wines sells for around $1000 US a bottle.

Biodynamics, however wasn’t always for wine. Rudolf Steiner had developed the system for his own gardening pursuits. The most popular treatment seems to be a concoction called preparation 500.

In this practice, cow horns are hollowed and filled with cow manure. They are then buried, on the fall equinox, in places around the property where astral energy lines cross. On the spring equinox, they are dug up and the contents diluted in rainwater.

This mixture is then stirred, by hand, in alternate directions for an hour to dynamize it. Using only about a handful for every acre, the mixture is then watered down and sprayed on plants and the ground. Preparation 500 is believed to transfer the life giving force of the earth to the plants.

A little less romantic, and a little more sadistic is a recipe for biodynamic pesticide. You must first capture some offending insects and char them in a wood stove. Then, grind the charred remains in a mortar and pestle and sprinkle the ashes around the garden.

All of this must be done when the moon is in Scorpio. I hate to see any creature killed, but if it does work, I suppose it’s better than spraying the earth full of chemicals and killing them all anyway. What’s the life of a few to save the lives of many, maybe?

I have no personal experience with biodynamics and have no idea whether or not I should believe the claims. Mind you, the fall equinox is coming and my garden could always use a little help - anyone have a cow horn I could borrow?

Wine And The Roman Empire

Anyone who knows wine knows that it has greatly impacted the history of our world. From Noah drinking it in the Old Testament, to legends of soldiers who used it as courage to fight during medieval times, wine has impacted conquests and wars. While this impact could have been more direct, with a very small glass of wine declaring itself Emperor of France, its subtlety was still felt; it is hard to refute the argument that, without wine, our world would be very different. History, as we know it, has always been under the influence.

A good part of wine?s impact on the world must be credited to the Roman Empire. While other societies have used wine and spirits to mold cultures, the Romans, because of their eventual vast expansion and reputation as being ?the trendsetters of history,? had one of the biggest hands in the success of the grape: when it comes to wine, the Romans have earned the right to lift up their togas and curtsy.

Nearly synonymous with the word ?power,? the Roman Empire was a time in Ancient Rome when rule fell under an autocratic form of government. As Civil War plagued the land, Octavian (known later as Augustus) defeated Mark Antony and organized the Roman Republic into the Roman Empire. Known for expansion and conquest, at its height the Roman Empire stretched from Britain and Germany to North Africa and the Persian Gulf.

As the Romans invaded lands, they also introduced their culture and refinement to those lands, as if packing up the ideas of Ancient Rome in a briefcase and carrying them along to every conquest. Wine, a huge part of the history of Ancient Rome (as demonstrated by the vast amounts of vineyards planted around Italy), was one of the ideals that transcended territories.

In Rome, wine was drank at every meal, making one to wonder if a modern day Roman would pour Chardonnay into his Cocoa Puffs. Even slaves, slaves who were thought to exist on the same spectrum as mongrel dogs, were allowed to drink wine. A life of servitude, to the Romans, seemed reasonable, but a life without wine was out of the question; it was simply preposterous.

Possessing an affinity for wines that could grow old, the Romans often sipped the spirits of wine aged ten or twenty years. Their wines were also, in keeping with the reputation of the excess known to mark their culture, high in alcohol content.

The Romans were well educated in the different grape varieties and the different regions from which they came. They were also very inventive with their wine, often adding ingredients to alter the taste. Among the ingredients they experimented with were saltwater, honey, herbs and chalk.

Keeping with their creative abilities, the Romans contributed to the culture of wine through their invention of glassblowing. Having previously been stored in large clay vats, wine?s flavor was often altered. And so, enter the Romans. After discovering that glass could hold wine without affecting the wine?s flavor, Romans changed the way wine was stored, ultimately changing the way it tasted.

As the Roman Empire expanded, so did its vines, reaching as far north as Britain. France, previously planted with vineyards by the Greeks, was conquered by the Romans and soon many more vineyards sprung up. Beginning with the Rhone Valley vineyards, the Romans quickly planted their vineyards all across France, leaving France to eventually become known as producers of only the finest wines.

When the Romans got to Spain, they found that the Spaniards had beat them to the punch, and the wine. They possessed vineyards that dated back to 4,000 BC. But the Romans, not to be outdone, began demanding wines of better quality. The Romans then took over the viticulture in this area, fermenting it into greatness.

The Germans, like the Spaniards, had been engaged in grape growing for thousands of years. But, when in Rome (or rather when Rome comes in) things start to change. The Romans, having brought in higher quality and better techniques, began to alter the vineyards of Germany. Even some of the soldiers, taking time out of their busy schedule (10 a.m. - conquer, 11 a.m. - conquer, 12 p.m. ? lunch), were involved in planting vines.

The Roman Empire was a monster player in history. It?s likely that even the most scholarly historian can?t completely grasp all the intricacies involved in this era; there are far too many. While the Romans influenced the societies they conquered, they also influenced those societies? appreciation for wine. Without them, the fine wines of Europe might not exist: The Roman Empire made it possible to drink wine when in Rome, and everywhere else.

What Is Corked Wine?

Keeping a wine bottle sealed is probably the most important factor when it comes to maintaining a good wine.

A cork is essential, as it keeps oxygen out of the wine bottle. If a bottle of wine is not airtight then it may become oxidized and undrinkable

Traditionally, the only corks worth considering were those actually made of cork. Recently, however, many wine experts have recognized that cork may actually cause more problems than it solves.

Cork, due to its malleable nature may have imperfections; these can result in the seal of the bottle not being as airtight as it could be and the wine being spoilt. In an attempt to avoid this problem, modern cork manufacturers may treat the cork with a chemical called TVA. Unfortunately, this chemical can cause the wine to taste and smell a little damp and musty.

Having said this, cork is able to expand to fully fill the neck of the bottle, which therefore, still makes it the preferred option for special wines that need to be stored, over a long period of time.

Plastic corks are becoming increasing popular, of late. One of the main problems associated with traditional corks is that the wine becomes ‘corked’. Plastic corks prevent this occurring. Great! I hear you say. However, there can be minor irritations with plastic corks. A plastic cork can sometimes be difficult to extract from the bottle and virtually impossible to fit back into a half drunk bottle.

Another recent development is the widespread use of screw-top bottles. Until recently, this type of seal was used for only the cheapest of wines. Wine producers across the globe are now recognizing the benefits that screw tops provide. This type of seal ensures that wine is kept fresh; there is no chance of the wine becoming ‘corked’ and the bottle can be easily resealed. In reality, the only reason that screw tops are not more popular is because of the ingrained snobbery associated with this method of sealing a bottle.

No matter which type of cork you choose, it is important that you are able to recognize whether the wine has been properly sealed or not. A useful test is to see whether the top of the cork is level with the top of the bottle; if it isn’t, then that particular bottle of wine is probably best avoided.

If a traditional cork breaks when you are removing it - don’t panic! Use a corkscrew to attempt to ‘dig out’ the remaining cork. If this fails, simply push the remains of the cork down into the bottle. Contrary to popular belief, this will not destroy the wine’s flavor. You may have to fish out a few bits of cork, but the taste of the wine should remain unaffected. However, you’d be wise to finish the whole bottle, under these circumstances!

When choosing your wine, base your decision on the wine itself and not the type of cork. Resist the temptation to be a cork snob; a screw top bottle may just give you a pleasant surprise

Who Made The First Wine Anyway?

Although details are understandably sketchy, it is believed that, around 6000 BC, grapes were being grown and wine was being made in Mesopotamia (modern day Iraq).

Mesopotamia and Egypt Wine was popular with the pharaohs of ancient Egypt from about 3000 BC onwards. Inscriptions and illustrations of grape harvesting and wine making have been found in a number of tombs.

Many temples had vineyards attached to them and it is thought that wine was used for religious ritual purposes. However, as is still true today, the majority of Egyptian wine was produced in the Nile delta area.

Wine was stored in clay jars, as wooden barrels were unknown to the ancient Egyptians.

Greece The exact date that winemaking started in Greece is unknown. However, the remains of a stone wine press, dating from around 1600BC, have been found at a villa in Crete. Wine consumption in ancient Greece had strong associations with the cult of the god, Dionysos. With the rise of Greek influence throughout the Mediterranean and Black Sea areas, vines were introduced to areas as far apart as Spain, France, Italy and Georgia. It is believed that a number of traditional southern Italian grape varieties (e.g. Aglianico) were introduced by the Greeks.

Roman Empire The Romans continued the developments started by the Greeks. Wine was exported to all parts of the Roman Empire including France, Britain and the Rhineland area of Germany. Vineyards were also planted in many of these areas. The Romans documented different grape varieties and the types of soil that produced the highest yields. They also introduced wooden barrels and glass bottles to the wine trade, although these items didn’t completely replace clay amphorae for wine storage.

During the Dark Ages, vineyards were maintained by the monasteries as a source of communion wine. These wine producers laid the foundations for much of today’s modern wine industry throughout Europe.
